Food For Thought

Food. Defined in Webster's dictionary as, "something used in the body of an organism to sustain growth, repair, sustain vital processes, and to furnish energy". At the fundamental level food is exactly what Webster's dictionary says it is, "something that sustains life and supplies energy". Just last week I stated that in order to truly love and enjoy food for what it is we must put aside such simple definitions to get a better appreciation for it, so that we can become better "eaters". Food itself takes root in culture, ethnicity, religion, nationality... the list goes on. With that said, today's dish was inspired by the start of the Lent season.

Obviously the primary focus of this dish was designed to abstain from animal proteins. Black-Eyed Peas with Sauteed Spinach and Vegetables over Tortiglioni. This is a Greek inspired dish that contains copious amounts of monoustaturated fats (good fat) and fiber. The primary source of this "good fat" comes from heavy emphasis of olive oil in the dish.

Last week I discussed refocusing our time management skills so that we can devote more time to preparing our food. This recipe was a shining example of just that. Upon returning home from work, after finishing my food shopping, I prepped the entire dish (about 20-30mins). I then proceeded to the gym where I was able to get in a 30min tempo run (one in which I'm sure Max V. would have said I wasn't running fast enough). The exercise served as a great way to refocus my mind in order to prepare me for a relaxing night of cooking. When I returned home all that was left to do was add the ingredients into a pot and sautee the spinach. Once again using simple ingredients (plus large amounts of olive oil) I was able to create a dish that was delightfully filling, seasonal, and healthy. From prep to the dinner table you're looking at 60-70mins. Just as a strong/balanced body comes from time invested, so does a dinner menu.

Please feel free to try this dish yourself by selecting the NY Times link below.

Brett

Food For Thought

I'm going to take a different approach to our more recent blogs to inform you of an often over looked aspect of our training. Most of us here a TARGETRAINING realize that in order to progress physically we need to devote the time and effort into ourselves and training programs. With that said, I think its time to take the same approach as eaters. When it comes time to dedicating ourselves physically most, if not all, whom are associated with our sport/sports are willing. As athletes in such demanding sports we need to adopt a similar philosophy when it comes to eating.

Tonight I prepared a dish by chef Eric Ripert, owner and head chef of Le Bernardin in Manhattan. Cod Basquaise. It was a relatively simple dish that needed only time and effort in order for it to be completed "well". I use "well" loosely because I'm sure I fell far short of what Eric would have thought of his dish that I attempted to recreate. From prep to the dinner table this dish took me about 1 1/2 hours. When it was time to eat I was extremely pleased with how with just a few simple ingredients I was able to serve a dish that was not only quite delicious, but also rich in nutrients. Food should be treated as a cultural experience, something meant to be shared, not as simply a unit of measurement needed to provide "energy". When we (myself included) can adapt this philosophy I believe we will not only see a betterment in our overall health, but an increase in physical performance as well.

Feel free to recreate this dish as well. If you do I hope you can share a similar perspective.

Back in the saddle again, sort of!

It has been a long time since 2009 duathlon worlds, but after much patience, help from friends and family, and a little good luck I was able to make it to the start line of a race again.
Having never ran a 20k before, Sunday’s Boston Build up 20k event through the rolling hills of Fairfield offered a challenging way to get back into the swing of things. It was fun to see familiar faces on the start line as the whole field looked for protection from a relentless wind and jumped around to stay warm in the 20 degree temperatures.
Only wanting to use the event as a fun training session, I quickly gave up any pacing strategy in the 1st minute of the race as I matched pace with the front of the field in my bright new Avia “Troy Lee Special” Bolts. Definitely not fast enough for these shoes! Before long it was a 2 man race and I thought to myself, well I guess I’m committed now.
With 1mile left the pace was a bit too much so I eased off of the gas and trotted to the finish with my son and posted a respectable time for 2nd place.
It’s good to be back, and better to be healthy.
